French Fries and coffee for breakfast
Like breakfast nachos, the disco fries are a massive meal that’s fit for a crowd, yet easy enough to make on a lazy Sunday morning. Rip open a package of frozen french fries (or heck, use those leftover takeout fries from last night), dump them on a sheet pan, and bake until crispy.
1 (2-pound) package frozen French fries
4 thick-cut bacon strips
½ cup chopped white onion (from 1 onion)
1 tablespoon all-purpose flour½ cup whole milk
½ cup beef broth
½ cup brewed coffee
¼ cup tomato juice
¼ teaspoon kosher salt
¼ teaspoon black pepper
5 American cheese slices, torn into bite-size pieces
3 fried eggs
2 tablespoons minced fresh chives
Bake French fries according to package directions
Meanwhile, cook bacon in a large nonstick skillet over medium, turning occasionally, until crispy, 8 to 10 minutes. Transfer bacon to a plate lined with paper towels to drain, reserving drippings in skillet. Break bacon strips into pieces. Add onion to skillet; cook, stirring often, until tender and translucent, 2 to 3 minutes. Add flour, and cook, stirring constantly, until incorporated, about 2 minutes. Stir in milk, broth, coffee, and tomato juice; cook, stirring occasionally, until thickened, about 15 minutes. Stir in salt and pepper. Remove from heat, and cover to keep warm.
Sprinkle cheese over French fries. Return to oven, and bake at 425°F until cheese melts, 1 to 2 minutes. Top evenly with fried eggs, bacon, and gravy. Sprinkle with chives, and serve immediately.
